Green pea, mushroom and bacon

Dinner for one, or side dish for a dinner party with friends; this delicious green garden peas, mushroom and bacon dish is one to remember. I love to make it for myself, if I want to cook fresh and healthy but don’t have time (or intention) to be in the kitchen for more than 15 minutes.

Ingredients

Serves 1 for dinner, or 4 as side dish

250 gram fresh green garden peas
150 gram mushrooms, in slices
100 gram bacon or speck, in cubes
butter
olive oil
pepper and salt

Method

Have a look at your ingredients and decide for yourself what’s gonna take most of the time. I like my mushrooms quite dark and ‘dry’, as in: not too much liquid inside anymore, so these take time. I like my bacon a bit crisp. And I like the green peas al dente, and definitely not overcooked.

Therefore I started with with mushroom in a one frying pan, with a good lump of butter (or olive oil) over high heat in a frying pan. Fry the slices till they start to smell delicious in your kitchen and till all liquid is gone. This will take definitely 10-15 minutes. Turn off heat and if necessary remove excess fat. In another frying pan you can fry the bacon until you are happy with the result. I never add any oil or butter to speck and bacon. Then cook you garden peas al dente. This will take about 8-10 minutes. Drain and place back on low fire to dry steam your peas.

In the biggest frying pan, probably the one from the mushrooms, you now add the peas, bacon and mushroom and mix them all together. Season with pepper and salt and serve direct.
