Honey and olive oil glazed carrots

In the category ‘lazy housewife’ side dishes; these simple and quick honey and olive oil glazed carrots are always a winner. It’s healthy, it’s fast and it’s easy; a perfect side dish for both fish, meat or vegetarian dishes. Preparation time is less than 5 and oven time about 10-15 minutes (depending on how big the carrots are).


Serves 4
as side dish with a main

1 bunch of carrots, I used the small pretty ones
50 gram butter or 100 ml of olive oil
1 tablespoon of honey
optional: Italian dried herbs like thyme or oregano (Italian/French inspired food)
optional: cumin seeds if you prefer Arabic tast (Arabic inspired food)


Preheat the oven to 220 °C. Peel the carrots, but leave the green on. Cook them short (3 minutes) in a pan with water and salt. Drain and rinse with cold water to stop the cooking process. Dry the carrots, and then mix with the butter or olive oil and the Italian herbs OR cumin seeds. (depending on cuisine)
Put on a baking tray with baking paper. Season with pepper and salt, and sprinkle with the honey.
Place the baking tray in the preheated oven for about 10 minutes. Stir and turn around once after 5 minutes.
Serve directly.

Delicious with fish, meat or vegetarian food. Can be served French/Italian (with oregano or dried Italian herbs), but also delicious with cumin seeds, used in the Middle Eastern kitchen, think Ottolenghi and Northern Africa.
