Avocados are delicious and extremely healthy for you. These baked avo and Parmesan cheese cups are great. You can eat them for breakfast, lunch or dinner. Always a winner!
1 tablespoon extra virgin olive oil
4 free-range eggs
2 teaspoons chilli flakes
2 tablespoons Parmesan cheese, grated
sea salt, to taste
freshly ground black pepper, to taste
optional: Parma ham
To serve: toasted bread and cherry tomatoes
Preheat the oven to 200 ºC. Halve the aves and rub the inside of each half with the olive oil. Crack an egg into the hollow of each avo half. Sprinkle with some Parmesan and chilli flakes, and (optional) add some Parma ham on top.
Bake in the oven for about 10-12 minutes or until the eggs are cooked to your preference. Season to taste.
Service with cherry tomatoes and toasted bread.
