Quinoa breakfast with fresh fruit and crispy nuts

I know the quinoa hype is already over – done and dusted – and now I am the last foodie on earth who shares a breakfast recipe that includes quinoa with you! In an addition to that: to be honest quinoa isn’t my favourite. It gets stuck in your teeth and the taste is a bit boring, not even half as good as couscous, pasta or rice. But sometimes the scale tells you it’s time for a little crash diet. That was the case with me over the last couple of weeks and therefore I decided to eat a bit more ‘clean’. As the fit girls call it. Well, I will never become a very fit girl and I love butter, coffee, chocolate, French fries, winter stews and confit de canard too much. But having said that: it is never a bad idea to eat healthy, or at least to start the day healthy. I try to avoid carbohydrates a bit (no bread, no pasta, no rice, no potatoes) and eat lots of vegetables, fruits and other healthy stuff. And this breakfast, based on quinoa, is actually quite nice! That’s why I share the recipe with you today.

Quinoa breakfast with blueberries, almonds, walnuts, cinnamon and honey

Ingredients

Serves 2

150 gram quinoa
3-4 tablespoons Greek yoghurt
2 hands full of blueberries (or raspberries, strawberries, black berries)
20 gram raw walnuts, roughly chopped
20 gram raw almonds, roughly chopped
50 gram raisins
1 teaspoon cinnamon powder
1 knife tip nutmeg
optional: 2 teaspoons honey or maple syrup

Method

Prepare the quinoa as described on the packaging.
Allow to cool for about 5-10 minutes and then add the rest of the ingredients.
Divide over 2 bowls and serve direct. If you miss some sweetness then add a teaspoon honey or maple syrup.
